Sweet & Savory Oven Stir Fry Veggies

Getting up close and personal with these delicious veggies! If you're one who likes to eat your colors, this is the perfect side dish for you!
*(If serving to multiple people or as the main course, alter the recipe as needed (ex. double or triple recipe; this is a single serving))
To create this:
- 1 small sweet potato, sliced
- 1 carrot, chopped
- 1/2 zucchini, chopped
- Add a drizzle of olive oil
- Add a sprinkle of salt and pepper for taste (I like to use Lawry's seasoned salt for a more savory flavor)
- Sprinkle on about 1/8 cup of brown sugar to enhance the sweetness of the flavors and make them all come together (especially the sweet potato) (*optional
Put on top rack of oven at 400 degrees, stirring occasionally for 35-40 mins or until veggies are golden brown and completely cooked through.
I can't tell you how many times I make these veggies as a side dish or snack. Try it and make it your go-to, too!
