Coconut Sugar Roasted Veggies w/ Rosemary

Roasted veggies are the key to happiness! (Okay, maybe just one aspect..)
For this single serving I chopped up:
- 1 small sweet potato
- 1 stalk of celery
- 1 orange carrot
- 1 purple carrot (from a bundle of rainbow carrots)
- a few cauliflower florets.
Coat in a generous amount of olive, coconut, or avocado oil and season.
I combined these ingredients to create my own seasoning, here's how:
- 1 tsp coconut sugar
- 1 tsp brown sugar
- 1 tsp rosemary
- dash of Lawry's seasoned salt
- pepper to taste.
Bake at 425 degrees for 20 minutes, rotate veggies, and bake for another 5-10 minutes (or until cooked through). Seriously so good, and you can make lots ahead of time for meal prepping throughout the week!
