Vegetarian Zucchini Lasagna Spirals (Recipe from OhMyVeggies)

I've been waiting ALL week to make @ohmyveggies Vegetarian Zucchini Lasagna Rolls for my fam & it went over so well! Who knew a vegetable lasagna could and would be so delicious?! Quote of the night (from my Dad): "I've never really liked zucchini but when it's cooked and prepared like this, I'm now a fan!" Also from my Mom: "I liked that it came out al dente!"

On top of that, we rated this recipe a 10/10 - thank you for this delish dish @ohmyveggies (Instagram)!!! (Found on Pinterest!) Zucchini pasta for the win!

And as if dinner couldn't get more delicious... Caprese Salad Skewers came into play!

I made these Caprese Salad Skewers from stuckonsweet.com on Pinterest for appetizers and they turned out great!

Mozzarella Fresca is one of the things I give many thanks for, especially when paired with a drizzle of balsamic vinegar glaze, fresh basil, and cherry tomatoes (though I'd rather omit the tomatoes for myself!)!
