Chocolate Dipped Apple Bites

Is there anything better than chocolate dipped fruit? I don't think so! Chocolate dipped apple bites make for a wonderful display at your winter/Christmas party, or at any event or occasion; they're like mini caramel apples... without the caramel.
Here's what to do:
(I used Fugi apples, but feel free to use any of your favorite fruit that you think would mix well with chocolate!)
- Simply coat each piece of fruit in melted chocolate (I used Nestle semisweet chocolate chips and about 1/2 TB coconut oil. Melt chocolate mixture in microwave in 15 second increments, stirring each time until completely smooth - add more coconut oil if clumpy or not smooth enough.
- Stick toothpick in each piece of fruit and coat in chocolate mixture.
- Choose toppings and add to the top of each piece of fruit with toothpick side up (I used mini chocolate chips, cinnamon & sugar, powdered sugar, unsweetened Hershey's cocoa powder, and my own peanut butter mixture, but you could always use coconut, chopped nuts, or sprinkles too). *Optional: add a pinch of salt to each bite.
**For peanut butter topping mixture:
- Combine 1 TB Justin's Peanut Butter (or desired PB or nut butter) with 1/4 TB coconut oil and melt in microwave for 15 seconds or until mixture is completely smooth. Drizzle over chocolate apples.
- Place all bites in freezer on an aluminum foil-lined plate for 5-10 minutes (just enough to let the chocolate set). Take out and store in refrigerator or serve right away.
Ta-da! These chocolate dipped apple bites are decadent and fruitfully delicious - sure to make a statement at any event!
