Savory Quinoa Tacos w/ HoneyBaked Ham Soup

So now that I've got your mouth watering, are you ready to hear how I made these healthy savory quinoa tacos?

Here's the recipe:

- 1/3 cup cooked quinoa (follow directions on bag/container they come in).

- While quinoa is cooking, heat oven to 400℉ and place one Gluten Free Mission tortilla on two lines of the top oven rack in the shape of a downward facing taco for 5-7 minutes or until slightly golden brown - tortilla will hold it's shape.

- Add one spoonful of desired amount of salsa (any flavor) and a dollop of sour cream in a separate bowl with cooked quinoa.

- Add taco seasoning to quinoa mixture (salt and pepper optional).

- Top with a squeeze of fresh lime juice, shredded cheese (I used Tillamook Medium Cheddar Cheese), shredded romaine lettuce, and any other toppings (ex. tomatoes, onions, bell pepper, ect.).

If you're going for more of a fajita style taco, sauté peppers and onions and add (or replace) to the quinoa mixture.

"Garnish" with a side of baby carrots and you're good to go!
