4-Ingredient Peanut Butter Cookies

When I found this 4-ingredient PB cookie recipe my whole life changed ...well, it got a little bit better! Believe it or not, this is a healthier, gluten-free, flourless cookie and a great alternative to the traditional PB flour cookie with all that sugar! I found this recipe on YouTube, but tweaked some parts here and there and made it a version of my own.
(Serving size: about 1 dozen)
Here's how to make them:
- 1 large egg
- 1/2 cup brown sugar
- 1 tsp baking soda
WHISK
- 1 cup peanut butter
MIX
- 1 cup chocolate chips (*optional but definitely a good choice!)
Pop in the oven at 350 degrees for 10 minutes and let cool.
NOTE: When I first attempted this recipe, I used 1 cup Jif Creamy PB (which contains added sugar); however, since I've found healthier peanut butter options such as Justin's nut butters (which contains little or no added sugar) and Crazy Richard's (which contains no added sugar), I combined 1/2 cup Justin's Peanut Butter with 1/2 cup Crazy Richard's Creamy Peanut Butter, and the consistency was even better (smoother) and less crumbly. I would recommend this PB mixture, though an PB works as well.
Perfect to eat as is, or on top of an apple for an "apple cookie" (see other blog post). Brb while I go stuff my face with these!
