Avocado Egg Toast

Avocado? Egg? On toast!? Yes!

Not sure an explanation is needed, but here's a little how-to anyway:

- Toast 1-2 pieces of toast (I used La Brea gluten free artisan bread).

- Slice half an avocado (I like to cut the avocado in half, then cut the slices while they're still in the peel).

- Fry one egg over easy in a small pan with a generous amount of butter or ghee.

- Add salt and pepper to taste.

Place avocado and egg on toast and you'll be surprised at how complimentary this combo this is!
