Quinoa Stuffed Grilled Bell Peppers

Plants have never tasted so good - there's no doubt you will fall in love with these quinoa stuffed peppers!

How I made this:

- Cut one (red) bell pepper in two halves. Grill in pan over stove with a little olive oil or on on the barbecue until completely cooked through with desired amount of grill marks.

- Cook 1/4 cup (1/2 cup cooked) tri-colored quinoa. (Packed with protein!)

- Add desired spices. (There are so many different quinoa combos out there, find one that compliments your taste and your peppers! My combo didn't work super well so I'm not going to share it, but I will definitely refine this recipe mixture soon and share when I find a good one!)

Slice up half an avocado on the side, and garnish with some raw baby carrots, sugar snap peas, and chickpeas (or whatever you want), take a pic (it's insta worthy!) and enjoy!

*(Optional) Add shredded cheese, or keep it plant based & vegan and leave as is.

*(Optional) Place all food on (iceberg) lettuce for a more colorful, captivating plate! It also doubles as a wrap to catch any quinoa that falls from the peppers!
